For over ten years, Austrian Peter Hagen-Wiest has been at the helm of the Ammolite – The Lighthouse Restaurant – the only Michelin star restaurant in a theme park in the entire world. Peter Hagen-Wiest studied under grand masters such as Harald Wohlfahrt. In the Ammolite he proves that Michelin star cuisine doesn’t have to be showy.

 

Peter Hagen-Wiest was awarded his first Michelin star in 2014 and only a year later he had already notched up his second. Although classically inspired, Hagen-Wiest’s cuisine is anything but traditional. This Michelin-star chef puts his own stamp on classical dishes as well as modern creations. There are two set meals to choose from: “Black Forest Cuisine” with local ingredients and “Around the World” inspired by top-quality international delicacies. Each basic ingredient is set off to perfection with precisely selected accompaniments and sauces that slowly reveal complex layers of flavour. This wonderful combination of ingredients sourced close to home and specialities from around the world could hardly be better.
