Goulash Soup à la Mama

Ingredients for 4 people
2 kg beef
7 pickled gherkins
2 tbsp paprika powder, mild
3 rounded tbsp tomato purée
2 leek stalks
6 onions
1 small celery root
3 yellow turnips
2 parsley roots

 

Preparation
Cut the meat into bite-sized cubes, fry in oil all around in a large pan, add the tomato purée, sprinkle with paprika powder and continue to fry briefly. Then add all the diced vegetables and fry briefly. Now deglaze with one and a half litres of water and simmer over a gentle heat for 45 minutes, in any case until the pieces of meat are tender. Shortly before the end of the cooking time, add the pickled gherkins cut into small cubes. Season to taste with salt, pepper and paprika powder.
