Ingredients for 4 people
1 kg pork shoulder
1 medium-sized onion
1 garlic clove
2 bay leaves
8 black peppercorns
1 clove
1 pinch of salt
1 carrot
1 stalk of celery
Preparation
Cover the pork shoulder with water in a pan. Peel and roughly dice the onions and garlic and add them to the pan. Add the bay leaves, peppercorns, cloves and salt, as well as the peeled carrot and celery, to the pork shoulder and slowly bring the water to the boil. Allow the pork shoulder to simmer gently for about 60 to 80 minutes. Remove before serving, drain well, cut into thin slices and serve on a warmed platter with mustard and freshly grated horseradish. It is best accompanied by a colourful selection of salads, including potato salad.
